May is National Salad Month and while I love a good salad, they can get boring without a little fresh inspiration now and then. May is a perfect time to think about salads too, no doubt there are lots of fresh spring greens and veggies to be had most anywhere in the northern hemisphere. This is a good one for summer, when peaches & nectarines are in season: http://www.basilandfig.com/07/2013/kale-salad-with-nectarine-toasted-pecans/ Just be sure you're using homegrown/young/tender kale--older, tougher kale is pretty much impossible to eat raw (I learned this the hard way).
