I still have an abundance of zucchini and am continuing to look for ways to use it all. A week or so ago, I was hungry, really hungry and well wanted dessert too. Looking at all that zucchini in the fridge I decided on zucchini walnut cookies, though I wanted to do something a little different, something that didn’t require grating. I went for a chopped zucchini cookie and these turned out delightfully. They’re gluten-free and vegan and if you’re facing a nut allergy, the nuts could easily be left out or replaced with chocolate chips.
