Gluten-Free Peanut Butter & Jelly Thumbprint Cookies

April 2nd is National Peanut Butter and Jelly Day.  I am a huge fan of peanut butter anything and as an avid jam and jelly maker there tends to be lots of that around our place too.  I wanted to come up with a something combining these favorite foods of mine and these Gluten-Free Peanut Butter & Jelly Thumbprint Cookies were born.  They’re soft and slightly sweet with just a bit of richness that you’d expect from a peanut butter cookie.  If you’re so inclined make them to celebrate Nation Peanut Butter and Jelly Day or just because it’s Monday and any day is a good day for peanut butter.

Kathie, Just made these cookies and they are the best gluten free cookie I have ever had. Put some 73% dark chocolate on top and had to force myself to not eat the whole batch. Next time I will make it with the jam, but I was crazing chocolate. Thanks

These look so tasty! Just G+'d these. We have an allergy to eggs here, so I think I'll try swapping them out with flax or chia. I don't have any coconut flour - do you have a suggestion for another good substitute?

The thing with coconut flour is that it absorbs so much liquid. Any other flour like sorghum or rice would need increasing is my guess. I haven't tested it with any other flour so I can't guarantee success. However, I do have these peanut butter & jelly thumbprint cookies, these use oats just get a gluten-free type http://s7400.p32.sites.pressdns.com/peanut-butter-jelly-thumbprint-cookies/ (those use sorghum flour and a flax egg).
