Make the most of your lovage harvest by making some easy lovage salt to flavor food all year long.

This easy 2-ingredient recipe comes together with minimal fuss and can easily be made in large batches for yourself or for gift giving.

As the lovage grows this spring and summer season, you’ll be glad you have this in pantry when it disappears in winter.

Celery-Like Flavor

Love has a celery like flavor, a bit stronger but similar enough. Making lovage salt is alot like having a homegrown and homemade celery salt in your pantry.

That also means you can use this lovage version just like you would use celery salt in any of your cooking adventures.

Fresh Lovage Leaves & a Dehydrator

You could make lovage salt by just coming dry lovage leaves and kosher salt together and blending for the perfect texture.

However, I’ve found a better flavor by mixing chopped fresh lovage leaves with kosher salt and letting it sit in the dehydrator for a couple of hours.

Fresh green lovage leaves are chopped an mixed with salt in a small, white baking dish.

The flavor seems to get a bit stronger and more infused this way.

You want about 1 part chopped lovage leaves to 1 1/2 parts salt. It will seem like too much greenery but as the lovage dehydrates the ratio will balance out.

Slicing / Chopping the Leaves

Use just the leaves for best flavor. Simply snip them from the stem.

To make chopping easier, stack the leaves on top of each other on a cutting board. Then slice through in ribbons or roughly chop in whatever way feels easiest for you.

Make it Finer

Once everything is good and dry, run the mixture through a blender or food processor to make it finer. You can grind until the texture you prefer is reached.

This could probably be done with a mortar and pestle too, admitedly it’ll take much longer.

How to Store

Once you’ve ground it all together, simply store in an airtight jar away from sunlinght and moisture.

Salt is an amazing preservative, this should last a very long time. Generally, I recommend only making enough to a last a year.

Make Some to Share

Let’s face it, lovage is a productive plant, make the most of it. Make several batches over the growing season and save it a big jar. When the holidays or a birthday rolls around, package it up in small jars for your loved ones that like to cook.

You could easily put some in zippered plastic bags to include in care packages that would be lighter and less breakable than glass jars.

How to Use

Use lovage salt like you would plain salt for a slightly herby kick. It’s great for seasoning soups or casseroles. It’s perfect on top of baked potatoes, etc. There’s no reason to overthink it.

Ingredients

  • 1/3 Cup Chopped Fresh Lovage Leaves
  • 2/3 Cup Kosher Salt

Instructions

  1. In a small baking dish or cake pan, combine the salt and chopped lovage leaves. Toss it all together lightly.
  2. Put the pan in a dehydrator and turn it to 100 degrees Fahrenheit.
  3. Let the tray sit in the dehydrator until the leaves are crispy and dry. Give it a stir every now and then to prevent clumping.
  4. The herbs should be dry in about 4 hours.
  5. When dry, put everything in a food processor or blender and pulse until fine.
  6. Store in airtight jar.
