Every August I pick up a big box of nectarines, usually around twenty pounds, and then spend the next week or two figuring out how to use them before they’re gone. Some get eaten fresh, some get canned for winter. This collection pulls together the recipes I come back to most.

To Peel & or Not to Peel

Nectarines are technically just fuzzless peaches. Whether or not you peel that smooth skin for your recipes is purely a matter of personal preference. I often skip, leaving the peel but if the texture is bothersome, remove it and get creative with the following ideas.

And because nectarines are truly peaches, you could also use those nectarine in any recipes that call for fresh peaches in a 1-to-1 substition.
